It’s that time of the year when we don’t know what day it is, when Christmas merges into New Years without us even realizing it. That’s what happened with this post. I meant to post this for Christmas but too much turkey and cookies got to my head. However with New Years Eve being tomorrow night, I think this drink still checks the boxes. And you need a use for all those decorative pomegranates you’ve had out for the last month anyways. This cocktail would go well with a festive tablescape to complete the occasion.
Pomegranate French 75
For the simple syrup:
In a small saucepan, combine 1 cup sugar with 1 cup water. Bring to a boil. Add a couple sprigs of rosemary and crush in a couple pomegranate seeds to make it a pale pink. Let it simmer for a 1 minute and then take it off the heat to steep and cool down. About 30 minutes.
To assemble:
In a glass, pour in 1.5 oz gin, 1 oz simple syrup. Stir. Top up with champagne and garnish with a sprig of rosemary and pomegranate seeds.
